I have a 15 gallon, I don't dose any ferts, I got a pothos and duckweed to take care of my nitrates levels, but I'm afraid if it'll kill my anubias by taking away all of the nutrients. I'm also planning on using mineralized top soil and add some stem plants.

It's possible, though anubias is very slow growing therefore doesn't have a high nutrient demand. If you see leaf discoloration, weird shapes, or stunting, you might want to start dosing fertilizer.

I dont think it will kill your anubias per se, but the anubias might grow slower, is all. They are really slow growing plants anyway.

With duckweed, I would advise removing some every week during a water change to avoid it overtaking the tank.
