For what it's worth, IMO nothing slimes up a tank more than a uneaten dissolved shrimp pellet. Be careful not to over feed the shrimp pellets.

The angels may bully when they start getting some size on them, especially if a breeding pair.

all those fish are active hungry eaters. You could feed a Cory specific sinking pellet, then feed the more active fish so they have a chance .

Not a single one of my angels will touch shrimp pellets beyond the initial peck at it to see what it is, they don't like them at all.

And I agree, for me, they are just a tank messer if the fish won't vigorously eat them.

If it could fit in their mouth they will eat it, I would try to feed my cory's shrimp pellets most times it wouldn't even make it to the bottom of the tank the other fish would eat it especially the silver dollars. But some that would the cory's would eat, i also agree with others said, that they could be pretty messy if overfeed and sitting on the bottom not being eaten.

Are there any alternatives?

My corydoras are pretty nocturnal so I drop their food several hours after lights out which gives them a much better chance of getting it to themselves.

If you are just concerned about the Corydoras getting enough food, consider using New Life Spectrum Thera + A pellets. They are small sinking pellets infused w/ garlic.
All your fish will eat Thera A & plenty will sink to the bottom for the Cories.

Are sterbai corydoras nocturnal?
No, though like many bottom dwellers they can be more active at dawn & dusk, they prefer a less brightly lit tank, most of my Cory tanks weren't lit at all just natural daylight.

Both my cory and angels will eat omega-one shrimp pellets as well as wardley shrimp pellets (which are not as healthy). The prefer waderly since it is soft - with omega-one they have to wait for it to soften. Also my sterbai hid and were very skittish until the top was completely covered with italia val making the bottom very dim - which they greatly prefer and now spend all day out and are not very skittish at all.

Something else to bear in mind is that the sterbei’s would appreciate a warmer temp. Sure they’ll live at 24c/ 77f, but they’ll thrive a lot better at 27c/80f. They are also on the larger end of Cory species , so a decent group of them need a larger tank.
I wouldn’t recommend Pygmy’s with angels , somewhere in the middle like salt and peppers could work though.

I have a very long pipette , like a turkey baster , that i load with pellet food for the corys and feed them with that near a large crypt so they get it , then feed the fish to distract them.

I have many cories and worry about them, too, so they get shrimp pellets, or sinking wafers or bloodworms on different nights. The Blackskirts grab them if they see them and take off. They sure seem to struggle with eating them, but I guess sooner or later they must get it swallowed!

My heater is preset to 78f

I think I can find Omega-one shrimp pellets but not wardly shrimp pellets
