What plants should I add?

I am looking for some ideas on how to make my 60G goldfish tank look more natural and add height. I currently have black sand and a bunch of rocks in my tank with one fake plant.
What plants are okay for goldfish and very easy to grow. I recently broke down my 60G planted tropical tank due to the plants not thriving. I have a T5 HO lighting system with two bulbs in it and I also already have aqueon plant food, flourish, fourish excel and root tabs. The tank is around 72 degrees.

Goldfish will pick at plants relentlessly, but vallisneria and anacharis will grow fast enough that they should be safe to add to the tank.

I think Anubias might be okay too - it's tough and unappetizing to most fish.

    - Egeria Densa
    - Ceratphyllum Demersum
    - Lysimachia Nummularia
    - Duckweed
    - Sagittaria Latifolia
    - Nupher Luteum, these have a tendency to take over a tank, lots of trimming.
