I got a dozen tiny “feeder shrimp” a few months ago and now I have this monster in my tank. I’ve read ghost shrimp stay relatively small. Do I have a large ghost shrimp or is this another species?

Looks like whisker shrimp. They're typically fine but can pester smaller shrimp and small fish.

"Pester" might be a bit too little.

If anything gets sick or weak, the whisker will eat it or try to eat it.

They can also take down smaller fish and shrimp.

He and my African clawed frog have already eaten every shrimp/ fish I had housed with them. (Feeder minnows) I had purchased the shrimp as a possible snack for the frog, Now that he is so large, do I need to keep him separate from the frog? The frog is slightly smaller than the shrimp now

Yes, you should probably separate them, whisker shrimp are very aggressive.
