What is this grassy stem plant?

I got this plant a while ago and I completely forgot what it is. Also, can this plant root itself if I cut the top off and stick it in the sand?

It seems pretty happy in the tank so far... it was only about 5 inches and now it's grown to almost a foot and a half and floats on the top of the water

If it has a stem then yes, you can take cuttings and grow new plants:)

I know I've seen this plant ID'd here recently but for the life of me I can't think what it was.

Looks like hygrophila angustifolia. You can cut it in between leaf sets and replant it as needed.
