I put as much media as I can fit into the trays, and don't forget the mechanical media

Yes, fill the trays up. Although I prefer Seachem Matrix bio-media, it is relatively cheap and supposedly has more surface area then bio-balls and ceramic rings.

should I place all the 3 white sponges that come with the sunsun on the bottom tray? if I were to use matrix media, should I fill the other 2 trays with it?. Thanks!

I have a SunSun HW-302 and here is a what I do....
I buy the 4 pack of filter pads from ebay for around $6, here is a link....
This is the order of media, following the flow of the water.
Water comes in and goes down to the bottom then hits 1st basket with
2 x blue coarse filter sponges (help filter out larger stuff)
1 x white fine polishing pad
2nd basket -
1 x white fine polishing pad
Seachem matrix with some mixed in filter floss/sponges from previous filter to help seed the bacteria
1 x white fine polishing pad
3rd basket
Seachem Matrix
1 x white fine polishing pad on top before the water exits back into the aquarium
The blue sponges will last forever. I replace the white fine polishing pads every few months, usually 2 at a time so as not to kill too much beneficial bacteria. I also use a DIY sponge prefilter on the intake, that I make out of a sponge for a Aquaclear 70HOB filter. I just cut it to size, and trim out a "hole" to slide the intake strainer into. This also helps keep most of the larger gunk out.
The 1 liter size of Seachem Matrix is about the perfect amount for the above setup and costs around $8-10.
