I was wondering how to start a 5 and 15 gallon tank using the walstad method thanks (I live in Australia so it has to be available here)

First make a trip to Bunnings lol. You'll need some organic potting soil. Make sure it has manure. Then pick up any type of gravel at your local fish store, as well as some plants of your choice. Order nicrew LEDs online (cheaper). While you await the lights, get some fine mesh and push the soil through it. Discard all the stuff that doesn't pass through the mesh. Cover the bottom of your aquariums in 2.5 cm of soil & then 2.5 cm of gravel. Fill the tank up a small bit, enough to be able to push some carpeting plants in. Put the carpeting plants in & then fill up the tank the rest of the way (gently).
You can now add your stem plants. I recommend hornwort & ambulia but there's a bunch of other plants you can do. Add them.
When your light fixtures arrive place them on the tanks.
Good luck
