Hi, Is there a difference in the amount of fish - say a 30 gallon tall vs. a 30 gallon long- could hold?
No, just a difference in the kind of fish. Some fish like angels need a taller tank. Some fish, like active swimmers, like more horizontal swimming room, or fish that have longer bodies do better in long tanks.

The long tank are usually preferred over the tall ones because you have more water/air exchange with the long tanks. 20 gal. high tanks are commonly used for breeding tanks for angels though because angelfish do better with the height.
