I have a 36 gallon bow front tank. I have always used gravel for my fish tank but decided to rebuild with sand as the substrate. so my question is how do i properly siphon the fish waste for the sand so know gas pockets can form? I also have about 8 live plants and a moss ball, and the tank is stocked at about a gallon bellow capacity with community fish. Would there be a special siphon i can purchase for sand?

Waste normally sits on the top of sand so you can pass the siphon above the sand. You can use your hand to stir it up to prevent any anaerobic pockets.
