Stumped On The Nitrogen Cycle

You could and it shouldn't hurt anything but your ammonia should get to you before the fish food decomposes enough to form ammonia.
So the ammonia doesn’t arrive til tonight at about 9pm. But I tested nitrite, nitrate & PH
Ammonia : 0
Nitrite : between 1 and 2ppm
Nitrate : is at about 40.
Ph : 7.6 or above
What should be my next steps?
Attached are the nitrite and nitrate in case I’m off

My girlfriend says the nitrite looks like .50/1ppm
And nitrate is 40/80

I’m going to test in the morning & then do a 50% water change bc nitrate is too high. I dosed ammonia just now.

HI everyone, so I tested today and
Ammonia : 0
Nitrite : 0
Nitrate : 40 or 80.
I’ll be adding fish tomorrow, so one last question. Should I dose ammonia again tonight to keep the bacteria fed? Or should I just leave it til I put the fish in?

Ammonia is actually .25. Got a second opinion.
