5 ember tetras, 2 guppies and one platy.
1 ghost shrimp, 2 amano shrimps, 1 cherry shrimps, 1 nerite snail

Stocking level is at 56% according to aqadvisor.

I'm not sure about the kind of water I have wether soft or hard, I did the soap test and it gave me a lot of foam bubbles so I guess it's soft water? I did a ph test using paper strips and gave me a 7.

Are 5 ember tetras the minimum size or do I need to add more??

I think you would have room for some more embers. Probably for a total of 8-10.

My male guppy is chasing them. Should I do something or wait?

If its newly set up then it's normal. If its been going on for weeks you could try adding a few line of sight breaks. Tall ornaments or plants type things to break things up.

I want to keep the stocking level low to leave a large room for error because I sometimes won't be around to do weekly water change, for like 2-3 weeks, I added a pothos plant to help.

CHerry shrimp have a tiny bioload. You could easily add more while still keeping the tank understocked. I understand completely- i prefer to keep my tanks understocked as well.

I already had like 6 of them and they all vanished, leaving only 1. Probably eaten by the guppies or platy.

I've added 2 more ember tetras and 1 more cherry and nerite snail. I forgot to mention that my tank has the footprint of a 10 gallon tank, it's 19.685 x 13 x 13 Is that a problem?
