I got my 55 gal set up and was wondering some advice on stocking it like a community tank I was thinking this combination:

2 DG
2 Ram Cichild
10-12 Neons
5 Cory cats

Would that work for a community tank or would it not. Should I add some fish or remove some please let me know. (If you think it’s understocked please give me a suggestion for more fish)

You would need to increase the amount of cory, and they need to be a cooler water type.
What kind of ram are you looking for?
Here is my best option for you to try, and you can change it if you don't like it.

12 Neon Tetras
12 Black Skirt Tetras
10 Cory
2 Bolivian Rams
1 Bristlenose Pleco

Unfortunately, they require warmer water than neon tetras do.

If I had a 55 gallon i'd do an African Cichlid Tank.
I’m in the middle of beginner and intermediate I’m not really sure how to manage it should I do that type of tank?

I would keep the tank around 75 degrees.
German Blue Rams need at least 80 degrees.

Yes, you could do that.
Why not put both schooling fish at 10, and then keep the rest of the stocking, but add a DG.

Tropical fish flakes, or granuels will be fine.
You can feed the cories shrimp pellets, or any carnivorous bottom feeder pellets.

Lastly how many fish should I get at a time and which ones should I get first.
