Guppyapocalypse

I am not new to fish keeping, Bettas tend to be my preference, but I am fairly new to doing planted tanks.... successfully.
My 13 yo son has a working sorority of 7 and 1 male king (not with the females yet).
I am aware of how Bettas are so there are other tanks to house the male if things go wrong.
We just got the cycle started on the 60 gallon and the ammonia is going down. He wants to get the plants established before the Bettas go in, which I agree with completely, but I am not sure as to what I can do.
The nitrates are up to 10ppm but ammonia is 2ppm (no nitrites). Can I add the plants with the ammonia where it is? If not until 0 then should I add a little to keep the cycle going while trying to get the plants established?
I am working with p. Java Fern, dwarf hair grass, creeping Jenny (?), And the ones in the photo. I have liquid fertilizer and I know I will nee root tabs. Some tips and direction towards success would be great.
