Shy crayfish, what should I do?

So I got my blue lobster crayfish a couple of weeks ago, she was doing great in the tank. I unfortunately had to rearrange the tank because she was eating the roots off of the anubias I had floating.
Now that there's nothing floating she's been hiding a lot.
I know she's not molting because she is coming out to eat
I also want to point out that I have absolutely no luck growing normal floating plants.
What can I do to make her more comfortable?

Any tank mates?, does it have enough hides to feel safe, Are water arameters and all health type stuff good?

Could you try plastic plants for more natural environment style if you don't want to risk live plants.

-She has plenty of hides (why I can't see her in the first place). The live plants in there are all ones I don't mind her eating, I just didn't want all my anubias dead so they went to my guppy tank.

- Water parameters are all good
0 ammonia 0 nitrites 10 nitrates

- Her only tankmate is a nerite snail. I used to have a crayfish in my 55g and it managed to catch and eat my cardinal tetras so I had to sell her.

Any ideas for floating decorations? I feel fish wouldn't be safe in there with her.

Perhaps some crawfish friends for someone to interact with?

She uses the whole tank, with another crayfish she'll probably just fight with them. She's about 2.5" now and will get around 5" (according to the guy who sold her to me). I'll probably have to transfer her to a bigger tank when she gets older.

not sure what to say? maybe remove some hiding spots to force her to be out and about more?

Honestly I'm just looking for something that floats in the mid to top area of the tank so she feels safe enough to come out.
Someone on Twitter suggested those artificial plant mats because they float so I'm going to try that.
