How long should I leave them in the tank? It says remove after several hours but won't the fish overeat?

What are you feeding, to what sort of fish? I feed pieces of wakame and they are generally gone by the next day.

It's just seaweed strips (omega one). And the tank has mollies, platies and a dwarf gourami

If it's not gone in a day, then remove it. If you're getting lots of leftovers then feed less. Over eating vegetables is seldom an issue.

How come I can leave seaweed in all day but flakes need to be ate in a couple mins?
Sorry if the question is dumb I just don't want them to gorge and die!

Different types of food. Flakes are composed of animal protein and filler . Vegetables are vegetables. Too much decaying plant matter will affect water quality over time, but not as fast as degrading protein sources.
