Can fish see their reflection on the side of a tank?
Mine seem to look like it’s chasing it’s own reflection only for a few minutes and then swimming off again?

Have I lost the plot thinking this? please help

Welcome to FL

Yes they can. You often hear of Betta fish "flaring" at the sight of their reflection thinking its another fish.

Some of my fish love to "glass" surf at certain times of the day when the glass is reflective

Maybe it's doing a self reflection exercise like Stuart Smalley (SNL character) "I'm good enough, I'm smart enough and doggoneit, people like me."

my Midas cichlid used to attack his reflection. He would do it for quite a while at a time. Then go relax. And then go flare his gills. And so on. He was quite the character.
