Tank is reading at 0 ammonia but still has some nitrite. Has nitrate also. How do I bring down the nitrite numbers?

    You wait.
Keep doing what you're doing since it seems to be working and when there's 0 ammonia, 0 nitrite and some nitrates you're done cycling.

If you have fish in the tank, and you're not using TSS+, do water changes to bring down the nitrites to protect your fish.

Ah, yes. My advise is for fishless cycling.
As TexasDomer says, if you're keeping fish in your tank you need to bring down the nitrites by changing water. Depending on how many nitrites you have, you may have to do some back to back water changes.

What are your nitrite and nitrate readings?

I'm glad to hear that. Good luck!
