Hello.
I've this new tank for my crayfish(s) and have added plastic plants.
I've heard somewhere that they would try to eat even this and might die... is that a true concern?

Crayfish will cut live and plastic plants. Some people have no issues but others experience them chomping on the plastic. Crayfish do best with driftwood and a good bit of hidy holes. I personally would stay away from plants of any kind for crayfish.

Will they eat them?

It's possible, if nothing else they will likely uproot them constantly.
