My Electric Blue Jack Dempsey Is Looking Pale!

So I've had him for probably 10-11 months. Just recently been looking a little pale overall compared to what he use to look like. Water parameters are fine for JDs. Tank mates aren't agressive or take food. He eats fine. Sometimes he's super skiddish and will tweak out and swim around quick. Sometimes he'll hide too. But overall acts normal. Think there's and issue or is this just him adjusting his coloration?

What exactly are your parameters?
There's a lot more to it than what is "fine" for certain fish, most fish have the same requirements for water chemistry.
What size tank do you have?

Besides the Jack Dempsey, what other fish are you keeping with it?

water parameters before last time changed water wer:
~78°f
Nitrites and ammonia 0
Nitrates 20-25
pH levels are stable around 7.4-7.5
Water is a little softer than I'd prefer but everything stays stable and i haven't had luck raising the hardness.

Stocking:
EBJD
Firemouth
Leopard gourami
2 German blue rams
2 octolus
5 bummble bee cats.

Live planted 60 gallon with sand substrate.

Has anyone had this issue before? Is it just his color changing naturally? Is there anything else I should keep an eye out for?
