My Betta Is Changing Colors?

So I have been away for only 1 day and somehow, my betta is changing colors. also one of her eyes are clouded. I researched a little and I've heard that they can change colors and it happens when they get used to the tank, but she's been in that tank for a little more than a week, so why is she just changing colors now??? I've seen that female bettas can live with other fish, so I also got 3 Black skirted tetras, 2 gold skirted tetras, 2 guppies, and 1 black molly. The black molly seems to be bullying the other fish, but my betta in particular. she only has a few spots of red around her face and gills. I honestly can't tell is those are wounds or if she is just changing colors...

Fish can take weeks to acclimate to their new tank. A week isn't very long.

What tank size are all your fish in?
What are your water parameters?
