Looking For Plant Ideas/devising A Plan For Them To Last (roomba The Tangerine King)

Hello everyone! Hope your day or night is fairing well.
It has finally happened. Roomba, my dear and beloved Tangerine Lobster, has finally eaten ALL the Frogbit. One poor leaf floating in the corner of a breeding tank is all that remains of my Frogbit. I very much miss having live plants in this tank because they looked so nice!
Any Tangerine owner knows that they will eat everything they can get their claws on. I have been lucky and he prefers to chew on the driftwood rather than the decor. I have devised a plan for this spunky little lobster and would love some ideas for plants.
After reading a bit on crayfish and their bad habit of eating everything I have found that plants that are more free flowing tend to get munched on less. Of course that most likely won't stop Roomba since he has no problem swimming or climbing his way to the top and floating around on the Frogbit (My it rest in plant paradise:hungover. The flow of the tank doesn't bother him one bit either but free flowing plants could help, who knows!
I am also looking for some plants that are tall and have no problems growing up. He does love to climb and I feel he doesn't have enough options. He enjoys climbing to the highest point on the tank to oversee his kingdom though the highest point only goes a bit less than half way up the tank. He will occasionally climb the filter but it's a bit harder for him and he tends to fall down more. I also think the Electrics will enjoy swimming through some plants and having some new turf to to command.
Due to the fact that they will be munched on, a plant that grows fast will be most welcome.
Now, as far as getting him to eat less of the plants I plan to add a good amount and add ! Yes, Ghost ! I wanna toss a bunch of Ghost in the tank after the plants are add. Roomba looovess to hunt . When there is for him to track down he gets most excited and super happy and zooms all over the tank in search of his yummy dinner.
I haven't done too much with the tank as of yet because I wanted to watch his behavior and the fishes behavior to come up with something that would suit them both and create an amazing and happy environment. They are happy right now but something that is very important is to keep the Tans entertained as they do get easily bored. They love new toys and anything new to the tank they will flip out over and explore and play with and with out that they do get rather bored and sit in their cave thinking, "Oh bother" (in their best Eeyore voice.)
Brings me to my next quest! What are some good aquatic fish/cray toys?! People don't really think about fish toys but as I said Tans love to be entertained. I am thinking of plopping a moss ball in there, giving him a new food cave. Yes, a food cave. Help me out here! What are some ideas you all have? DIY items are most welcome as well. Trying to be creative with this tank.
The biggest objective is to bring plants back into this tank and keep a majority alive as well as making a fun Tan Lobster paradise.(Oh yeah... an Electric paradise too)

I'm by no means an expert on plants, but my first thought were Vals or Dwarf Sag.

Yep and they grow very fast. But I only have experience with dwarf sag. Supposedly there are a few different varieties, because my particular one grows rather tall.
