i have ALOT of build up, just had to euthanize a fish ); Another thread diagnosed my problem as old tank syndrome, I have a ph below 6 and lots of nitrates and ammonia. A large deep clean was recommended. I just did my first and rlly got down in the substrate. I’m sure the ph changed somewhat, how many hours should I have to wait before I do my next, (did 30% plan on doing an 80% total. And not touching filter for the bb)

You could do 50% daily water changes
So it wouldn’t be good to do 30% now 30% in an hour or two, then 20% an hr or two after that tonight?

I wouldn't. I would do day by day. It will give you more leeway with allowing the fish to adjust.

So I changed all the substrate yesterday and 60+% water. Yesterday the phwas 7 now it dropped back down to 6, ammonia still around 3 ppm, nitrites still 0 and nitrates dropped to like 5 ppm. What’s happening why won’t my high ph stay and why won’t the ammonia drop??? Should I do another 60% today??
