I was wondering, if I got a java fern and first rubberbanded it to a flower pot in my tank. would it attach to the flowerpot like it does with driftwood.

it may take it longer to attach the pot because its smooth, but yes it can anchor itself to a pot.
roughing the pot of a bit first may help, like sanding it with rough sand paper, or scratching groves in it.

Java fern can attatch itself to pretty much everything as long as it has a slightly rough surface, so, as Steed said, it will be smart to take sandpaper to rough up the surface a bit. Take the rubber band off after maybe 2 months or so.
