Do I have to worry about home made CO2 set producing killing my fish?

Don't use sugar and yeast, it creates CO2 but the production is irregular.

Use citric acid to baking soda.

Any idea how much bubble per second would be appropriate for a medium planted 12 gal tank

Depends on the lighting and planting really, but keep it at 2bps for a week or so and see what you get for growth.

Is CO2 the only gas being released? If not what percentage is co2
