So I decided to go out and buy a stand instead of build one from 2x4s for my 75 gallon tank. I bought a Top Fin brand from Petsmart. The floor slopes and the stand sits unlevel (the front is lower than the back). I cut apart the cardboard box it came in and stuck one large piece under the whole stand and then stuck two smaller pieces stacked under each end of the stand. It's now level but I don't want to add the tank or water until I know if cardboard is enough to keep it level without it being crushed over time.

I would suggest to make some shims out of hard wood. Don't use the cardboard, it will compress when you fill the tank. If it gets wet you will have another issue on hand.

Should I just use shims on the sides or the whole way across the front under the kick board? Does the kick board support any of the load or just the sides?

Guessing from the one picture above, it looks like the load is distributed through the side panels only. If you could upload more pictures, I can take another look.

Edit: Is it this one?

If you live near a Lowe's, they sell both of these for less than $2 a pack.

I know this is probably a dumb question, but am I correct to assume they include extra hardware in these kits? I have a bunch of extra screws... I went over the whole thing three times and can't see anything missing. I build circuit breakers at work and am a mechanic also so having leftover hardware is usually not a good thing to me lol...

It would worry me too but on the other hand it's Topfin and probably made in a Chinese sweat shop. If you have ever been in a Chinese manufacturing shop you will know not to trust them.
I only trust the ones I visit personally (yes there are also some top notch shops there!), work from unknown sources is subject to scrutiny.

You might want to shim the toe kick board, where the center panels come down too. If the top plane deflects, you get some load through the center panels on the toe kick board as well.

So I shimmer the stand and got it as close to level as possible. Does my placement look alright? Should I be worried about the gaps?
