For today's menu:

Chef is making Country Style Ribs out of 2 Boston Butts, grilled to perfection (I wouldn't have it any other way of course) :whistling:

Slaw
Deep fried Hushpuppies and Onion Rings (he made himself :happy0034
Sweet tea


I'm glad he loves his Big Green Egg (grill).

I love to share my good fortune of his delicious meals! Y'all come on!

having terriaki (sp) chicken, bbq chicken, kielbasas , dogs n burgers! tons of salads and of course a good round of enjoy your day!

Hushpuppies are like a deep fried corn meal with different spices in it. Very tasty.

Wow Shawnie.....you need to come south! Although not all hush puppies are created equal. lol Fast food hush puppes are good for knocking some one out if you throw them.

I bet chef's are delicious! What breading and onions does he use for his rings?

Lucy, Chef makes the beer batter most of the time with Vadalia onions. He also does an egg wash, flour and bread crumb.

Ken

The Big Green Egg grill is porcelain and you can't connect gas and you can't use charcoal because the chemicals in the charcoal would seep into the porcelain.

He uses a burned wood, oak, that we get from ACE Hardware. It last for several grillings, much longer than charcoal too.

We might have to swap some tips..sounds great!
Big green egg huh? I have a smoker with a hot box..been thinkin of turning to the dark side of the Kamado. I hear great things!

I had some scallops sent via FEDEX Thursday from a boat in NJ(GREAT company to work with BTW). I smoked some bacon with heaps of brown sugar and cayenne pepper for 3 hours at 200. Sliced thick lemon wheels, placed over direct heat on one side, Got a pan heated to 700 degress, threw in some butter and seared the candied bacon wrapped scallops for maybe a minute and a half, place sear side up on the lemon so it would pull up the flavor...OUT OF THIS WORLD!
Smokin two racks of ribs, chicken wings, sirloin...all with a crawfish boil going on. Pretty crazy day so far. Will throw up some pics later

Sounds amazing! Let's see, how long will it take us to get there......

We're having sweet & sour ribs today. Hubby uses a charcoal grill, which I don't like, because I don't think the heat get be regulated very well. So, I'm simmering them indoors. Not sure yet what the side dishes will be. Bon Appetit! :;pickle
