Hi there, could anyone tell me what the next step is?

    Ph is 7.4
    Ammonia is 0.25ppm
    Nitrite is 2.0ppm
    Nitrate is 20ppm

I rescued a little mystery snail who's sitting in a damp pot, I assume I can't add him now?

Not sure why the nitrate would be so high, could there be a lot of it in my tap water?

Nitrate should go higher and then the nitrite will drop. Your ammonia should be dropping too. Give it a little more time, IMO. You may actually have to add more ammonia back up to 2.0 one more time to get it all moving. When you get 0 ammonia, 0 nitrite, and some nitrates then you are cycled. Then do a water change to bring down the nitrates to lower than at 5 or 10 ppm. Keep us posted.
