3 DG wouldn't work so well. How about only 1?

Dont do it in a 40. 75gal maybe.... When they mature its all bets are off. Think of DG as similar to betta (well technically they are cousins) their aggression is with each other. Success stories of keeping them together are far and few between with flaws in most.

I understand that sometimes u is lucky and gouramis do well, sometimes not? what size is your tank? are your gouramis all female, male, or combination? same species.....

Depends on the species. Most males are fine, especially in a 40 gal. They don't like other gourami or betta, they don't always do well with angles and other cichlids. they are typically fine with live bearers though, unless its small enough to eat

A lot of times when you see these guys getting along it comes down to a few factors.

Tolerance, they may tolerate each other like you tolerate an overly obnoxious gum chewing clown(strange analogy...)...just give it time to blow.
Dominance, on or more of the fish has submitted, that fish will eat less, not be able to own an area of the tank and will be bullied by the dominate.
Stress, too many aggressive fish in a small space will stress them all out, this can lead to abnormal behavior.

While dominance sounds nice to some extent, you want all your DG to have their own territory and be able to strut their stuff, its not fair they are forced to live in a space where only one of them leads.

I have a DG in my 75 gallon it is lightly planted about 3 small planst and he mostly keeps to himself. He has a small cave that he shares with my sail fin pleco and the clown loaches like to play in it. Mine is extremely calm and gets along with my other fish. But I only have 1 and it is a 75 gallon tank

I have 2 male DG's in my 140 gal(5 1/2foot long), couldn't find females, that's fairly densely planted and one has been presumably attacked by the other DG, has some wounds on it tho they are healing over. Never really seen them fight tho.
So I probably avoid in your tank having 2 DG. They have been mostly keeping to the opposite sides of the tank now heh. They don't seem to care about other fish which is good ^^.

what about if I found a male and female or would it be better to stick with one ?

Stick with 1. The whole M/F pair theory is pretty false, the male will constantly pressure her to breed and if she doesn't want to breed then he will bullie her, if they do breed in the tank then she would need to be separated to treat for any damage sustained while breeding, and the nest would more then likely need to be destroyed since a male DG on a nest will kill just about anything that comes near. M/F only work out when there is 1 male to 3-5 females (harem) to spread aggression.

I had one coral male and two females for a few years way back when I had to keep an aquarium for school and they seemed pretty happy. The male never bubble nested (too much current) and while he did try to chase one of the girls occasionally, they would team up and chase him right back. The tank I had was probably too small, looking back on it, but they lived for about two years give or take. At the time that seemed like forever.

2 years isn't much for DG imo. 1:2 M/f worked for you, if the tank was too small it can also be stress.

I don't know about 3 but I've had 1 peacefully living in a community tank for about 8 months

Like ppl have already mentioned if you end up with males you could end up with problems.

I know that now, but I was only about twelve at the time, so wasn't the best fish keeper

Learn from your mistakes and in the case of an online community you can learn from others mistakes. That's why research is key. When I first started my 29 gallon I had 3 balls a rainbow shark and a red tailed shark. Within a month in the forum I re homed my rainbow and got a bigger tank.

Mine killed a male killifish, so I returned him. Just know that any bright multi-colored non-schooling fish may be attacked.
