I know that bettas have a risk of tearing their fins on sharp things. But can you still use driftwood? If so, what kind would be best?

Yes, most driftwood doesn't have any sharp edges, and if it does you can just sand it down.
I hear mopanI recommended a lot, most any wood works.
Don't do Cholla wood, bettas have a tendency to get stuck inside and sometimes die. It's also rather porus, and they could potentially tear their fins on it

I use malaysian and mopanI in my betta tank, and it hasn't had any issues.
You can use spiderwood, any sharp edges should be broken off or sanded.

I like spiderwood because of the arches and loops with the branches. My betta likes to weave through the branches.

I like manzanita and spider wood, neither typically have really sharp points is fins should not be torn.
