Question: what species and how many (if any) could fit in a 0.7 gallon? I wasn't sure if there was a species small enough for a tank that tiny or not.

Awesome tanks!!! I watched a few videos and still have more to go! Question: do your Corys or Pleco ever go after the shrimp? Thinking of putting my shrimp in with the Corys at some point, I have orange neocardinas and they’re tiny

Thanks. That's what I thought. I was just making sure that there wasn't some micro tiny species that could.
In my opinion even the micro tiny "nano" ones should be kept in bigger tanks.
The size of the fish shouldn't be leading in the choice of the tanksize.

Absolutely agree. According to the "1inch per gallon rule" a 10 inch oscar is fine in a 10 gallon tank. You really got to look at many factors. Size, activity, bioload, and many others.
