Dirted tank questions

So I think that for my budget dirted would be best for my 5 gallon, but i have a few questions because I’ve never done this before!! Also, just double checking that a tank with a layer of potting soil/mix (i don’t remember which one it is) with a layer of sand or fine gravel is a dirted tank? lol
So here are my questions:
1. do I use potting mix or potting soil? And is plant food the same as either of them? I have a ton of plant food already at home but no potting mix or soil.
2. how thick a layer of dirt do I use on the bottom and how thick a layer of gravel/sand?
3. will i have to replace the dirt ever or will it last a long time?
4. Do I need to vacuum the bottom of the tank or just remove water ? I will most likely use fine gravel (pic attached) because that’s what I already have. Unless of course it wouldn’t work and I need sand in which case I would just buy sand! Also how would I vacuum the bottom if there is sand? I’ve heard toxic gas(es? i don’t remember lol) can accumulate underneath it so it needs to be vacuumed and moved around every once in a while, is this true?
Those are all the questions I can think of right now and I’ll make sure to post any others I think of later.
TIA

For sand you vacuum right above the surface of the sand and then you stir up the sand so there isn't toxic gas building up down there.

Forgot to add 1 question, do I gravel vac if i have a carpeting plant or not try vacuuming until the dwarf hair grass is well established and won’t get sucked up by the siphon ?

I think you would want to let your plants root good so not to suck them up. The dirt you would want and 1 to 2 inches so not to make anerobic areas. Im not expert by a long shot there is some good information on YouTube as well. The Dustin fish tank Channel has a lot on dirting a tank and the benefits and drawbacks that come with.
