I have a 12 gallon long planted tank with 6 chili's and 9 neocaridina and 3 zebra nerite snails and I want to put a little lady in here. ASSUMING I found a super chill gal, would this work or am I overstocked?
Here's the tank

I wouldn’t say you’re overstocked, but a betta would extremely likely make a meal out of your chilis and shrimp. I would say don’t do it.

I have had female betta that lived with other fish. They definitely hunt down most of the adult cherry shrimp.

Plus that tank has no lid. Betta jump just for the fun of it.

I like your tank, but defer to others on Betta questions.

Would a Gourami be a good fit?

Gourami and betta are both from the Anabantidae family, so they can often be just as aggressive as each other. When you say gourami, do you mean a single, couple, multiple ????? also what type, dwarf gourami, honey, three spot, blue?????

A honey gourami or a small group of them will fine with the tank mates in #1.

A honey gourami is the only gourami that would work. I had a female honey with neocardina shrimp, and she never even touched the baby’s. I don’t think she would be physically able to eat the adults.

I think even dwarfs would be too big and aggressive.

A single small gourami of some kind suitable for this environment

Are honeys smaller than dwarfs?

Perfect. Honey it is
Be sure to get a female. A little larger, but a lot less aggressive. A male might go after your chilis, while a female rarely will.
