I just bought some cherry shrimps and planning to drip acclimate them, the problem is that the tank I bought them from had ich, can cherry shrimp spread diseases? Also if some of the water from the store came into the tank by the net would it be contaminated?

No shrimp will not spread ick as they can't catch it.
Theres always a chance there are floating cysts will get into your tank via the net but if you've discarded the water during the drip you should be OK, the other thing when the cyst drop off the fish the go into the substrate so again luck may be on your side.
If the shrimp are going into a shrimp only tank then you have nothing to worry about even if you have transferred any cysts

There are 3 platys in the tank right now, if I removed the water by a syringe while acclimating would it be 0% contaminate chance or its more safe to put them in the other 2.5 gallon, but there is a chance that the tank isn't cycled yet, thats why I'm nervous about putting them in there.

Maybe after acclimating and getting them in the net you could additionally pour some of your tank water over the whole net to wash off any traces of their previous tank water.

Should give that a try, just want my tank to be safe otherwise I should put them in the 2.5gall

Do your acclamation and remove the water with a syringe that will help, don't put the shrimp in the 2.5 if its not fully cycled, put the shrimp in with the mollies if for some reason the mollies get ich you can remove them more easily than the shrimp to treat. There's not many if any other options open to you

If the tank is running for a month with an apple snail eating there plus sera bio nitrivec bottled bacteria , is that all enough to cycle a small tank?

It's usually recommended to let a tank run for several months before adding shrimp so it can build up some biofilm for them to graze on.
