What exactly is a chocolate bristlenose pleco? Are they just another color morph or is it another name for the standard color?

It’s another color of the bristlenose.
I have always liked the red ones, or the green phantom bristlenose.

I like the starlights, but I have black substrate. They're hard to find too.

Brown and chocolate are interchangeable for the common color, chocolate is a fancier sounding name that gets more notice than just a brown bn. Reds and yellow looks best on black substrate. Black really brings out the colors in any red type (all of mine are terracotta orange, but they are still called reds lol).

Gotcha. I kinda wondered if they were the same. I'm still planning on a lemon yellow for my tank. About to be back in the market for one (preferably a long fin).
