Definitely use a sponge filter. It will help keep your water clean and also give your shrimp something to graze on

Hmm? You shouldn't have other fish with shrimp in a gallon tank. Here's what you can have
Now how many are in that tank from where the shrimp disappeared? What size tank?

Shrimp can be very good at hiding so I wouldnt worry if you can't see them at times

I just added 6 adults and roughly 45 shrimplets to a 12 gallon planted tank. It took them a few days to finally feel comfortable and come out. I've still only seen a handful of babies but the adults usually stay out now. Just give them time to get used to their new home.
