Can/should bettas change color throughout the day? Is something wrong?

I brought home my crowntail betta a little under a week ago. At the store he was a very deep blue with a black face, the first night he became much paler, slightly lighter blue and pale blue face. He was dark again in the morning, so I assumed it was just the stress of moving. Every day around 11, I go to feed him, and he is dark, throughout the day he becomes pale again. I also noticed that when he is pale he has pink/light red markings on his face in front of his gills, I thought they were some sort of injury at first, but they are fairly symmetrical on his face, so I don't think they are.

Is this normal? Should I be worried? My last betta changed colors over a long period of time but never back and forth like this.

He seems healthy, active, and eats well, though he does struggle against the current from the filter when he swims in front of it at the surface, so he hides behind it frequently. I feed him 2-3 omega one betta pellets or 1-2 hikari freeze-dried blood worms once a day. The water quality has been alright though I did not cycle the tank before adding him.

Ammonia: 0.25-0.50 PPM (used ammonia detoxifier and waiting until Friday to do a partial water change)
Nitrite: 0 PPM
Nitrate: 0-5.0 PPM
pH: 7.4-7.6 (regular pH and High Range pH gave different results, won't go down)

Is your tank cycled? the ammonia would be causing stress, which could change colors.

The tank's not cycled, so I'm sure that is causing some stress but I've been testing the water every day and using ammonia detoxifier.

Any idea why he would also change back to his "healthy" color overnight?

No clue. Maybe the ammonia detoxifier is only working part of the time? Or only right after you dose?
Do lots of water changes. I'd say 30-50% a day. How big is his tank?

A lot of "detoxifiers" out there don't really work the way they say they do. Most just bind ammonia temporarily but it remains in your tank. The only thing that actually removes excess ammonia is WCs so just be sure to do a WC before the ammonia is converted back it it's harmful form.

Another idea is if your light is really bright, that combined with the cycling could be causing significant stress during the day. Then at night when it's dark he calms down/feels safer and his color returns? Not sure, but it doesn't sound like normal color changing.
