I have been keeping fish for 10+ years but I am brand new to shrimp. I have a ghost shrimp that's 1.5 inches long and I don't want him to pick on RCS if I get them. I am also considering getting celestial pearl danios with the shrimp, would that work? The tank is 5 gallons

No, the CPD will need a 10g or larger for long term.
I think you'd be OK with the shrimp.

Try to plant it densely, then you'll have more success.

I was thinking about a Betta but don't they go for shrimp.

Depends on the individual betta. Mine is fine with amano shrimp but they are lager than cherries. Some bettas are fine with all shrimp, others will attack anything even snails.
