Oh that's good about the crushed coral. It does dissolve slowly though. Adding it to the filter is more effective since there's water flowing over it and spreading in the whole tank, but it's probably still enough like you have it since things are stabilizing again. That's great btw! Did you do a water change?
Don't worry about chasing pH. It's fine at 6.8. Yes, the baking soda was just a one time thing to help kick start the minI cycle, not to use regularly. Sounds like it worked itself out anyway I just recommend changing more water going forward, like 50% weekly or 25% bi-weekly. Replenishing the water will help maintain pH and fresh water is good for your fish.
About the test, they are helpful if you wanted to learn about it. It's a lot of info I have to warn! I'm still leaning things! For now, I think it would be good to go with the 50% weekly water changes. Water changes don't have to be siphoning the bottom or cleaning the glass, just a quick exchange of water is helpful in so many ways.
