Best Way To Switch Substrate?

So I have had a 40G fully cycled tank for a few months now but I've been wanting to switch from gravel to Seachem Florite black and black sand on top of it. What's the best way to go about switching it out? What should I do with my water and fish?

 

I would use a Rubbermaid tub to hold the fish temporarily then drain all the water and shop vac out all the gravel and the remaining water. Then add everything back in. Remember to keep you media wet in order to maintain your cycle. Good luck. It's kinda a pain.

I just want to do this the right way, I don't want any casualties in the process. Any other suggestions?
