For midground plants, anubia nanas are amazing! They literally survive in any condition, and create so many hiding places for all species of fish. Amazon swords and java fern are really good mid-background plants, and are also pretty hardy.

I would recommend going to BucePlant.com and looking at their list of low tech plants. This is essentially a list of beginner friendly plants. There is quit a lot of them.

I had pretty good luck with Anarchis, just try to have at least a little better than standard LED lights

Tank dimensions would improve my answer, but if you're running a lower light low-tech setup then java fern and maybe moss as a groundcover work pretty well and are very survivable. One plant I def recommend for beginners is Water Wisteria (Hygrophila Diphormis). It grows in all directions and can be pruned to suit, and if you prune off the tops and replant clipping will rapidly reestablish. It's a hardy plant and easy to care for and rather pretty, especially since it fills out nicely and can be used to block line of sight for tank equipment on the back of the tank.

Anubias nana is such a hardy plant. I somehow managed to keep it for multiple months without any auxilliary lighting and it stayed alive the whole time. Swords need more light than anubias but look really good in my opinion.

Anubias and Java fern.
Definitely Java fern. It is low light and sprouts babies like crazy!
