I just got some Anubias hastifolia and I am wondering if I am supposed to plant the roots in the substrate or if I leave them unplanted and attach it to driftwood?

Either one is fine. The roots can be in the substrate, just make sure it's only the roots. Don't bury the rhizome.

Agreed, you can even leave them to float and they will be fine.

So can I just attach it to driftwood and not plant it in substrate?

Yep. The roots can also take nutrients from the water column.
