Angelfish scaling?

Hi I have an almost adult angelfish (at least size wise) and one juvenile. I got them both about a week ago. They are in a 30 gallon tank and the water parameters are ph about 6.5, nitrite 0 and nitrate about 10. Water tem is 79°.
Today, I noticed the big one sort of shedding and not just in one spot. The reason I notice is because the juvenile is sort of "picking them off" and he/she doesn't mind it all (sort of like welcoming it). Also the juvenile also sort do this kind of quick rub on the other one, as of to lose more off. Is this normal?

He/it just died. That was very fast.
I moved him to a smaller darker tank and treated with stress coat to no avail.

Not at all. The juvenile is doing fine. I think he was still sort of in shock from his new environment and either a water change or something else stressed him even more.
