Help Ammonia Won’t Go Down!??

I’ve had this tank running over a year and a half and previously kept piranhas in it, ammonia was constantly at 0.25 however it showed no nitrates and high nitrates, I’ve since got rid of the piranhas and now I have a red tail shark, spanner barb, male convict and a small electric blue acara. All the fish do fine, no disease, ammonia burns, anything of that sort. When I had piranhas I even had red cherry shrimp breed in this tank. It’s 250litres and has 1400litre per our plumb running, is my test kit wrong??

Your ammonia is fine.

You have way to much nitrate.

How often do you do water changes and how much water do you change.

Every weekend at least, sometimes if there’s a lot of debris I’ll do a small change mid week just to remove some of the dirt off the bottom. But every weekend I do at least 40-50% I’ve previously checked my tap water for nitrates and they come out pretty high if I can remember. I’ll do it now to see.
