It really doesn't have to be a specific amount. Do you have fish in this tank or are you fishless cycling it?I'm currently cycling my 10gal and how high do I need the ammonia to be to turn into nitrites and so on . Is there a point it has to reach or just wait it out and keep testing

You only need tiny amounts of flake food because they take quite a while to break down but yes, add each day.
They will make the tank fairly messy so you will need to give it a good vacuum and cleaning once it is cycled. Don't worry about the ammonia reading at the moment as you need to keep testing for the nitrite spike and following that the appearance of nitrates. When you get to zero ammonia and nitrite and you have nitrates you're there.
