75 Gallon, suggestions plz

I finally convinced my hubby to upgrade. We purchased a 75 gallon tank. The stand is being built, so it will be a couple of weeks before it is done. So this will be a slow build process.
I definitely want an underwater sand waterfall. I have been doing a lot of research on how to build one. There are two main ways to get it done. I’ll be going the easy route and using an airstone and pvc pipe. I want lots of plants and rock caves (because I want ropefish/reedfish). So any suggestions on substrate that does well for plants would be appreciated.
I am also wanting canister filters. I was told it is the best way to keep the tank nice and clean. I have no idea what to do there. I will need to research. I was told two canisters would be better, one to filter and one for media.
Stocking ideas are welcome as well. In my mind I want 2 ropefish/reedfish, 2 butterfly fish, Glass catfish, Boeseman Rainbowfish, Angel fish, and maybe some pictus catfish.
I know that ropefish and butterfly fish like to escape. So suggestions on tank lids would be awesome!!! I seen someone use the black mesh plastic stuff from the craft dept at walmart (i think its used for yard work or macrame) to cover holes in top of tank where filters or opening are.
Any suggestions or pics of tanks for ideas would be awesome!!!!!!

Can't wait to see it all set up and stocked!

With a big 75 gallon long like that I would do a schoal of torpedo barbs aka roseline sharks. I've seen a large group of beautifully coloured adults in a display tank and it was a sight that stayed with me to this day!

You said you wanted both ropefish and African butterfly fish, after a quick google search I realized those are both from the Congo river basin! If you wanted you could maybe do a Congo river basin biotope with a school of Congo tetras, some African butterflyfish, and a ropefish, that would be kind of cool :)

I have been researching canister filters... the fluval fx6 seems good, but there are alot of negative reviews and negative feedback on customer service. I’ve also looked at the sunsun, again mixed reviews, alot if people said the UV light has burned out and caused electrical shocks. Any suggestions on canister filters would be appreciated.
