So 2 honey gouramis and 5-6 ember tetras? That wouldn't be too much bioload for my filter right?

Also thank you, I have been a lurker for a while now!

Rn I have a top fin 10g filter which has been working great with an adjustable flow.

Yeah I plan on getting a better one in the future but for now, I will have to stick with this one. Also why a female and male gourami and not 2 of the same gender?

Usually you choose a 'breeding pair' even if that's not your intention. They tend to get along better, just make or just female can have a higher chance of attacking each other.

Oh okay so would it be possible for just one alone or pairs are just best?

Honey G do good in groups but in a 10g I would not do 2, I have seen them not get along in bigger. That is just me, plus they tend to be shy and hide, at least mine did. In a 10 gallon I would do a Male Betta or a school of Ember tetra. Shrimp and snails would love a 10 gallon.

I already have a betta in my 5g and was looking for another 10g centerpiece fish, would any other fish work besides the honey gourami?

Scarlet badis, someone might say german blue ram I personally would not. 10 gallon is small so your choices are very limited. Celestial Pearl Danio school would work as well. If it were me I would probably do guppys, super colorful and active and will bring your tank to life.

Ive looked into both and I dont think I could do badis and from what I have seen the german blue ram needs different water parameters compared to other fish I would want to add. I was thinking about CPDs thankyou!
