I am going to be away for 10-11 days for Christmas and I don't have anyone that can come feed my fish. Water wise I think my tanks would be ok going 10 days no problem because I normally do PWC every 7 days. Should I just take them with me? Or can gourami, A rainbow shark, neon tetras and a betta go that long without food?

They should be fine just do a 50% water change with double dose of Prime mine were fine for 10 days like that. Are they all in the same tank? If not do that to each tank.

Your fish can go many weeks without food. It takes a LONG time to starve to death - I'm talking months. There is stuff in the tank for them to snack on while you are gone. If you really feel bad about not feeding them, throw some ghost shrimp in before you leave. But, they really will be fine with no food.
