1 Betta & 1 Mystery Snail: High Ph & High Nitrite

How do I fix this? I use the API Master Test Kit:

  • My PH level is 7.6 and Nitrite level is between 0.25ppm & 0.50ppm

  • Ammonia levels & Nitrate levels are 0ppm

I have driftwood in the tank and the water is a bit brown due to tannins but I would like to keep some tannins in there because I think that's good for my Betta.

What type of dechlorinator do you use? If you use Seachem Prime, you can dose the tank and it'll be fine. If you don't, do a 50% water change daily for three days, then drop it to 20-30% every other day or so.
Really the only way to get rid of nitrite is water changes, detoxifying it, or letting bacteria convert it to nitrAtes.

I was using the Aqueon Water Conditioner that came with my tank kit but I recently bought Seachem's Prime but I haven't used it in his tank yet.

I recently did a 30% water change this week because there was a bit too much leftover food. When should I do another water change with Prime?

You can just dose prime into the tank for the volume of the tank. It will detoxify up to 1ppm nitrite. Next time it gets to 0.25, do a water change and dose, snails don't handle it well.
