Agree, if you see, most planted or at least heavily planted tanks have shrimp. Shrimp are great for eating algae and cleaning up any debris!
Also if you want shrimp or a breeding colony of shrimp you want to build around the shrimp. That means getting shrimp friendly fish!
That is because Glofish consist of zebra danios, tiger barbs, and skirt tetra. Not sure about the zebra danio but the tiger barbs and skirt tetras are known to eat shrimp. Many times people forget that glofish are different real species.

Yeah, I suggest only doing one male but only found out recently from one of the two that if you do decide to keep them have at least 6. Personally I would just do one to save the hassle or go with a more peaceful gourami like honey gouramis.

You will never have enough filtration in such a small tank. The only thing you can do is a 50% water change ever 12 hours until you get a bigger tank. However for 10-20$ you can just buy a storage container that is roughly 40 gallons at a hardware or department store.
Unless for some reason you switch water source or where you get your water is different from your tank water, a 50% is fine. I always do 50% water changes and none of my fish ever seem to have a problem
