Snails are their number one food. They need them to keep their beaks from growing too long. Generally, they'll eat most live food, and many can be trained to eat things like raw shrimp. Some can be trained to eat dry food.
I would say snails as your primary food supply (you can set up a "snails only" tank for breeding food. 10g tank, maybe some plants, add a few of the common pond snails, throw in a piece of lettuce, and let them go to town), with thawed shrimp, live worms (you can usually get a variety at the pet store), and/or frozen foods as treats.
